Biopolymers Expansion
- The project involves using hybrid mixture theory to develop unsaturated transport equations at two and three scales
- Solve the equations to predict expansion of starch during extrusion
- Make the comparisons to experimental data
- Utilize the results of numerical simulations to improve the characteristics of starch formed by extrusion
