The figure depicts a group of biological cells. The micropores in the cell walls, cell membranes, and protein and starch bodies are at the microscale. The cell cytoplasm is at mesoscale and several cells grouped together are at the macroscale. Dr. Takhar's group uses Hybrid Mixture Theory of porous media to integrate transport and other physico-chemical processes from micro to macro scales to obtain mathematical laws specifically for the food and biomaterials. These laws are more general than the ones developed for simpler materials in classical engineering fields. Examples of novel laws include generalized Darcy's laws, generalized Fick's law, generalized Fourier's law, chemical potential equation, near-equilibrium phase change equation, thermomechanical equations etc.
